Hayden Quinn's Coastal Road Trip


Chef & keen adventurer Hayden Quinn, his wife Jax, and their cute pup Peanut love a relaxed road trip, and their recent roadie in the comfort of an Apollo motorhome was one worth sharing! 

Hayden, Jax & Peanut spent a few blissful days exploring the south coast of New South Wales - soaking up the sun and cooking up a storm along the way. While in the camper, Hayden whipped up an easy and delicious curry, sharing how simple it is to make great tasting food on the road - proving that cooking in a camper doesn't need to be boring or basic! 

Hayden's Campervan Curry Recipe - 

Ingredients - 
● 1 tbs neutral oil
● 1 x small brown onion, diced
● 4 x cloves garlic, crushed and chopped
● 3 x sprigs curry leaf, leaves only
● 2 tbs curry powder (I used Love my Earth Fish Masala)
● 1 tbs brown mustard seeds
● Sea salt, to taste
● 1 (400ml) can coconut milk
● 400g peel green prawns
● White rice, cooked to your liking
● Coriander, to garnish

Method
Step 1. Heat a large skillet or saucepan over medium heat. Add oil and onion, cook for 2-3mins until onion begins to soften. Next add garlic and curry leaf, stir well to
combine. Once fragrant, add curry powder and mustard seeds, and toast for a further 1-2mins.
Step 2. Add coconut milk and stir, incorporating all the curry powder and spices into the mix, the coconut milk should change colour and bring to a gentle simmer. Add
prawns and cook until done to your liking. *Note, you may need to add a little water to the mix if it becomes too thick.
Step 3. Serve curry over rice and garnish with coriander. Enjoy!

This Cairns to Karumba road trip promises to be the perfect blend of adventure and relaxation, all within the mesmerising Australian outback! Day 1: Cairns to Atherton

Travel Time: 1 hour, 30 minutes

Distance: 79km

The first leg of this incredible Cairns to Karumba road trip has you starting off in Cairns where the Apollo Camper branch is conveniently located, making picking up your campervan easy and stress-free.

Once you hit the road, this scenic route promises to show you so much beauty that this part of Australia has to offer, a great start to your road trip Australia. Along the scenic route, make sure to pause at the must-visit spots like the Kuranda Scenic Railway or opt for breathtaking aerial views from the Skyrail Rainforest Cableway.

As you arrive in Atherton, you’re sure to be enchanted by the town's charm as you explore its hidden treasures, including the mesmerising Crystal Caves which are sure to leave you in awe. When hunger strikes, savour the local flavours at one of the quaint restaurants, or pick up some local supplies to create a delicious meal in your Apollo campervan kitchen!

For a peaceful night's rest, park up your campervan at the NRMA Atherton Tablelands Holiday Park, where you can rejuvenate amidst nature's beauty.

Day 2: Atherton to Undara 

Travel Time: 2 hours, 15 minutes

Distance: 190km

From Atherton it’s then on to Undara, which promises a delightful drive through Queensland's captivating landscapes.

Along the way, make sure to stop at the Herberton Historic Village, a living history museum that takes you back in time. Plus, while you’re here be sure to stroll through the town’s charming streets and immerse yourself in the rich heritage of the region.

Once you arrive in Undara, be prepared for an unforgettable experience! Dive into the heart of the Undara Lava Tubes, a geological wonder, through a guided tour. These ancient tunnels, formed by volcanic eruptions, offer a fascinating glimpse into the Earth's history. Afterward, don't miss the chance to witness the mesmerising night sky in this remote location, perfect for stargazing.

When it's time to rest, Undara Discovery Parks is your ideal haven. Nestled in the wilderness, this campground offers great powered camping sites and campsite facilities to make your stay comfortable and relaxing.

 

Day 3: Undara to Mount Surprise

Travel Time: 45 minutes

Distance: 47km

The journey continues and once you've journeyed from Undara to Mount Surprise, there's a world of adventure waiting for you in this charming outback destination.

As you step off the beaten path, make sure to kickstart your exploration by visiting Mount Surprise station. It's a fantastic place to delve into the region's rich history and soak up the breathtaking landscapes. Whether you're a nature enthusiast, history buff, or simply looking to unwind, Mount Surprise station has something for everyone.

Day 4: Mount Surprise to Georgetown

Travel Time: 1 hour

Distance: 92km

From Mount Surprise it’s then on to the next destination on this Cairns to Karumba road trip, which is Georgetown. Here you'll find yourself in the heart of Queensland's gem country, a place bursting with exciting activities and delightful experiences.

Once you arrive in Georgetown, be sure to set aside time for exploration as the town is a treasure trove of history and natural beauty. While here you can delve into the fascinating world of gem fossicking, learning the art of uncovering precious stones hidden beneath the earth's surface. It's an adventure that's bound to spark your curiosity and perhaps even lead you to a valuable discovery. After a day of exploration, you can indulge in some local cuisine that perfectly captures the flavours of the outback. Whether it's a hearty steak, freshly caught seafood, or bush tucker-inspired dishes, Georgetown offers a diverse culinary scene to please your palate!

Day 5: Georgetown to Croydon

Travel Time: 1 hour, 35 minutes

Distance: 148km

From what is sure to be a fantastic time in Georgetown, it’s then on to Croydon. Along the way be prepared for a journey filled with captivating sights and charming stops along the way.

One must-visit spot is Einasleigh, a small town where you can step back in time at the historic pub and then enjoy a leisurely stroll along the picturesque Copperfield Gorge. Once you've soaked in the tranquility of Einasleigh, continue your adventure to Croydon.

This quaint outback town is a treasure trove of history and culture, with its heritage buildings and fascinating mining history. While in Croydon, make sure to explore the local attractions and immerse yourself in the laid-back atmosphere of the Australian outback.

Day 6: Croydon to Normanton

Travel Time: 1 hour, 40 minutes

Distance: 154km

The next leg of the journey will have you travelling from Croydon to Normanton, where you're in for an outback adventure with a touch of Aussie charm!

Along the way, make sure to stop at the Burke and Wills Roadhouse. It's the perfect spot to refuel both your vehicle and yourself. Grab a delicious meal, stretch your legs, and soak in the remote beauty of the Australian landscape.

Once you arrive in Normanton, your options for enjoyment are aplenty. Explore the town's unique character and don't forget to pay a visit to the famous Purple Pub. It's a local icon known for its quirky exterior, and inside, you'll find a friendly atmosphere and perhaps a story or two from the friendly locals.

When it comes to accommodations, the Normanton Tourist Park is an excellent choice. It offers a comfortable and convenient base for your stay, ensuring you're well-rested and ready for the next day of exploring Australia.

Day 7: Normantown to Karumba

Travel Time: 50 minutes

Distance: 70km

The last day of the road trip in your Apollo travel van will have you driving from Normantown to Karumba, where a world of adventure and relaxation awaits.

Upon your arrival in Karumba, don't miss the chance to explore the Barramundi Discovery Centre, where you can delve into the fascinating world of Australia's iconic fish. If you're a bird enthusiast, Karumba is a haven for birdwatching, offering a chance to spot some of the region's unique avian species. And of course, the spectacular sunsets over the Gulf of Carpentaria are not to be missed – they're a daily showstopper!

When it comes to finding a great spot to park up your campervan hire for the night in this charming town, we suggest booking into the Karumba Point Sunset Caravan Park, where you can wake up to stunning waterfront views and enjoy the laid-back coastal atmosphere!

When you've seen all you want to in Karumba, it’s time to head back along the scenic Savannah Way to Cairns, or you can continue your road trip adventure, with the vast expanse of the Australian outback stretching out before you.
